Banana Pudding

Banana Pudding
(serves 6)

Ingredients
2 cups whole milk
4 large eggs, separated
1.5 tsp vanilla extract
1.25 cups sugar divided
1/4 cup all purpose flour
1/2 tsp salt
1/4 cup of salted butter
vanilla wafers
2 bananas, sliced
1/4 tsp cream of tartar

Directions:
  • preheat oven to 350.
  • in large saucepan, combine and mix the following: Milk, egg yolks, vanilla
  • In a medium bowl, combine 1 cup sugar, flour and salt, whisking well.
  • add dry mix to milk mixture hissing well to remove lumps.
  • Cook over medium heat, stirring constantly. cook for 6-8 minutes or until thick enough to coat back of wooden spoon.
  • add butter, whisking to combine.
  • let cool for 3-4 minutes.
  • in jelly jars, arrange 3 vanilla wafers with banana slices. pour 1/4 cup of pudding on top. repeat this once.
Meringue:
  • In a large bowl, beat egg whites until soft peaks form.
  • add cream of tartar
  • gradually add remaining sugar
  • beat until stiff peaks form
Spoon meringue on top of pudding. Bake 8-10 minutes or until meringue is golden and cooked through.

Freshly Stuffed Summer Squash


Thank goodness for gardens and fresh summer veggies. We always seem to have a supply of squash so tonight I decided I needed to get a little creative or we would get burnt out pretty quick.
Freshly Stuffed Summer Squash
serves 2
Ingredients:
  • 1 large yellow squash
  • 1 small yellow squash
  • 1 slice of whole wheat bread torn into little pieces
  • 1 teaspoon Herbs de Provence with Lavender (this might be a schnucks speciality)
  • 1/4 shredded mozzarella
  • spray butter
  • 3 tablespoons of chicken broth
  • salt and pepper
Directions:
  • slice 1 large squash in half lengthwise
  • scoop out center of squash into a mixing bowl
  • chop 1 small squash into pieces, add to mixing bowl
  • add bread pieces
  • mix in herbs, cheese, salt and pepper, and chicken broth
  • spray the inside of squash with butter and add some salt and pepper.
  • scoop the mixture into the squash
Bake at 400 for 30-45 minutes.
