Banana Pudding
(serves 6)
Ingredients
2 cups whole milk
4 large eggs, separated
1.5 tsp vanilla extract
1.25 cups sugar divided
1/4 cup all purpose flour
1/2 tsp salt
1/4 cup of salted butter
vanilla wafers
2 bananas, sliced
1/4 tsp cream of tartar
Directions:
- preheat oven to 350.
- in large saucepan, combine and mix the following: Milk, egg yolks, vanilla
- In a medium bowl, combine 1 cup sugar, flour and salt, whisking well.
- add dry mix to milk mixture hissing well to remove lumps.
- Cook over medium heat, stirring constantly. cook for 6-8 minutes or until thick enough to coat back of wooden spoon.
- add butter, whisking to combine.
- let cool for 3-4 minutes.
- in jelly jars, arrange 3 vanilla wafers with banana slices. pour 1/4 cup of pudding on top. repeat this once.
Meringue:
- In a large bowl, beat egg whites until soft peaks form.
- add cream of tartar
- gradually add remaining sugar
- beat until stiff peaks form
Spoon meringue on top of pudding. Bake 8-10 minutes or until meringue is golden and cooked through.
